Water kefir is made from kefir grains, also known as sugar grains, tibicos, tibi, or Japanese water crystals. 
The grains are made up of a culture of various strains of healthy bacteria and yeast, held together in a polysaccharide matrix created by the bacteria. 
The microbes feed on sugar and produce lactic acid, and carbon dioxide, making a fermented carbonated beverage which is very low in sugar

How to Make Water Kefir
Add 3 tbs of water grains to about 700-800ml of spring water in a litre jar
Add about 3 tablespoons of sugar
Stir until dissolved 
Place paper towel and rubber band over jar
Sit on bench for 2 to 5 days - temperatures play important role in fermentation 
Use a funnel and plastic sieve to pour Kefir into a resealable bottle - leave neck of bottle clear - important - do not use anything metal
Sit bottle on the bench for 2 to 5 days to get fizz
Drink chilled
Serving Suggestions
Water kefir can be consumed as is or flavoured with your favourite juices or superfoods
Storage of Water Kefir Grains 
When you are not making water kefir you can store water kefir grains in a refrigerator in sugar water for up to 2 weeks. 
For long-term storage, water kefir grains can be store in a freezer for up to 2 years. After freezing, water kefir grain may take up to 4 batches before returning to original potency.
